CAJUN SWEET POTATO FRIES & GARLIC-TAHINI DIP

Ingredients:

For the sweet potato fries:
  • 1 large sweet potato
  • 2 tsp Wild Girls cajun spice mix
  • 1 tsp salt
  • 2 tbsp olive oil
  • Lime zest

For the garlic-tahini dip:
  • 1 head of garlic
  • 4 tbsp coconut yogurt
  • 1 tbsp tahini
  • Olive oil
  • Juice of 1 lime
  • Salt to taste

Preparation:

For the sweet potato fries:
  • Cut the sweet potato into chunky fries size.
  • Mix with the Wild Girls cajun spice mix, olive oil and salt.
  • Roast in the oven at 200 degrees for 25 minutes (20 minutes on one side and the 5 remaining minutes on the other side).
  • Shave some lime zest on top once out of the oven.
For the garlic-tahini dip:
  • Place the head of garlic in an aluminium foil, add some olive oil and sprinkle some salt, fold and place in the oven at 200 degrees for about 40 minutes.
  • Squeeze the head of garlic in a plate, add the coconut yogurt, tahini, lime juice and mix well. Adjust seasoning if needed.
  • Plate with the garlic-tahini dip on the bottom and top with the cajun sweet potato fries. Finish with some olive oil and more lime zest.
