Ingredients:
For the sweet potato fries:
- 1 large sweet potato
- 2 tsp Wild Girls cajun spice mix
- 1 tsp salt
- 2 tbsp olive oil
- Lime zest
For the garlic-tahini dip:
- 1 head of garlic
- 4 tbsp coconut yogurt
- 1 tbsp tahini
- Olive oil
- Juice of 1 lime
- Salt to taste
Preparation:
For the sweet potato fries:
- Cut the sweet potato into chunky fries size.
- Mix with the Wild Girls cajun spice mix, olive oil and salt.
- Roast in the oven at 200 degrees for 25 minutes (20 minutes on one side and the 5 remaining minutes on the other side).
- Shave some lime zest on top once out of the oven.
For the garlic-tahini dip:
- Place the head of garlic in an aluminium foil, add some olive oil and sprinkle some salt, fold and place in the oven at 200 degrees for about 40 minutes.
- Squeeze the head of garlic in a plate, add the coconut yogurt, tahini, lime juice and mix well. Adjust seasoning if needed.
- Plate with the garlic-tahini dip on the bottom and top with the cajun sweet potato fries. Finish with some olive oil and more lime zest.
