  • 1 head cauliflower
  • 4tbsp(60ml) tahini 
  • 5gr zaatar
  • 3-4gr salt
  • Juice of 1 lemon
  • 2 tbsp (30-40gr) honey 
  • 3-4 sprigs of chopped parsley
  • Roasted almonds
  • Pomegranate


Step 1
Steam the cauliflower in a boiling pot for 8 minutes and then let the head air dry.

Step 2
Mix the tahini, lemon, salt, zaatar, honey and parsley. 

Step 3
Use half of the tahini mixture to glaze the cauliflower (reserve the rest for garnish) and roast the cauliflower at 220°C on fan mode covered with some aluminum foil for 10 minutes and then uncovered for 5 minutes. 

Step 4
Top with the remaining tahini mixtures, some more chopped parsley, roasted almonds and pomegranate and enjoy!
