Ingredients:
- 200gr baby red onions (or any onions)
- 140gr chickpea flour
- 300ml Wild Girls almond milk (or water)
- 1 tbsp olive oil + olive oil to caramelize the onions
- 1-2 tbsp balsamic glaze
- Pinch of chili flakes
- Pinch of salt
For toppings:
Works with any toppings of your choice.
We had in our fridge : peperonata, baby spinach leaves and balsamic glaze
Other ideas:
Pesto, tomatoes, arugula, pecorino, feta (for the cheese lovers), etc
Preparation
Step 1
Slice the baby onions in 2 or 3 (if you have big onions slice them about 2 cm thick).
Step 2
In a bowl, add the chickpea flour, plant milk, olive oil, chili flakes and salt and whisk until there are no more lumps. Let the mixture rest for 20 minutes.
Step 3
In the meantime, caramelized the onions with olive oil (in an oven friendly pan) on medium heat for about 15-20 minutes flipping the onions halfway through cooking.
Add the balsamic glaze, cook for another minute and turn off the heat.
Step 4
Pour the farinata mixture over the onions and place in a preheated oven at 220 degrees on fan mode for approximately 15 minutes.
Once cooked flip the farinata over a cutting board, add the toppings of your choice and enjoy !!
