SWEET POTATO CHOCOLATE CAKE

Ingredients:

  • 300 gr cooked sweet potato
  • 25 gr cocoa
  • 80 gr coconut sugar or maple syrup
  • 150 gr gluten free flour
  • 4 gr backing powder
  • 2 gr backing soda
  • 2 gr salt
  • 120 ml coconut cream
  • 1 tsp vanilla extract
  • 70 gr choco chips

 

Icing ingredients:
  • 300 gr cooked sweet potato
  • 100 gr melted dark chocolate

 

Preparations:

 For the cake:
  • Preheat the oven at 180 degrees on fan mode.
  • Cover all the sweet potato in foil and roast in the oven or steam cook until soft.
  • Mash the sweet potatoes with a fork.
  • In a blender, put half of the sweet potatoes (300gr) and all the rest of the cake ingredients except the chocolate chips. Mix for a few seconds.
  • Add the chocolate chips and whisk with a spatula.
  • Place in a 20 cm in diameter cake mold and cook in the oven for approximately 30-35 minutes.

 

For the icing:
  • Blend for a few seconds the remaining sweet potatoes and melted dark chocolate in a mixer.
  • Spread the icing over the cake and enjoy!
