Ingredients:
- 300 gr cooked sweet potato
- 25 gr cocoa
- 80 gr coconut sugar or maple syrup
- 150 gr gluten free flour
- 4 gr backing powder
- 2 gr backing soda
- 2 gr salt
- 120 ml coconut cream
- 1 tsp vanilla extract
- 70 gr choco chips
Icing ingredients:
- 300 gr cooked sweet potato
- 100 gr melted dark chocolate
Preparations:
For the cake:
- Preheat the oven at 180 degrees on fan mode.
- Cover all the sweet potato in foil and roast in the oven or steam cook until soft.
- Mash the sweet potatoes with a fork.
- In a blender, put half of the sweet potatoes (300gr) and all the rest of the cake ingredients except the chocolate chips. Mix for a few seconds.
- Add the chocolate chips and whisk with a spatula.
- Place in a 20 cm in diameter cake mold and cook in the oven for approximately 30-35 minutes.
For the icing:
- Blend for a few seconds the remaining sweet potatoes and melted dark chocolate in a mixer.
- Spread the icing over the cake and enjoy!
