Ingredients:
- 1 whole organic chicken (approx. 1.2-1.4 kg)
- 120 gr celery
- 80 gr leek
- 250 gr carrot
- 350 gr zucchini
- 85 gr onion
- 2-3 cloves garlic (10-12 gr)
- 2-3 sprigs thyme
- 1 tsp cinnamon powder
- 1/2 tsp ginger powder
- 1/2 tsp turmeric powder
- Salt/ pepper to taste
- 2 tbsp olive oil
- 3 liters water
- Coriander (optional)
- Lemon (optional)
Preparation:
Step 1
Chop all the veggies.
Step 2
In a pot, brown the chicken on all sides for a few minutes until achieving a golden color. Set the chicken aside.
Step 3
- Cook the onions, leek and garlic in the olive oil until translucent, for about 4-5 minutes. Season with some salt.
- Add all the spices and cook for another 2-3 minutes.
- Add the thyme sprigs, the celery and carrots and cook for another 2-3 minutes.
Step 4
Place the chicken back in the pot, pour the hot water, bring the water to a boil, cover and simmer on medium low for about an hour.
Step 5
After an hour, add the zucchini to the pot, cover and cook for another 15 minutes.
Step 6
- Remove chicken from pot, shred it and place back in pot.
- If you fancy, you can add chopped coriander leaves to the pot.
- For extra flavor, squeeze some fresh lemon or lime juice.
