  • 1 whole organic chicken (approx. 1.2-1.4 kg)
  • 120 gr celery
  • 80 gr leek
  • 250 gr carrot
  • 350 gr zucchini
  • 85 gr onion 
  • 2-3 cloves garlic (10-12 gr)
  • 2-3 sprigs thyme
  • 1 tsp cinnamon powder
  • 1/2 tsp ginger powder
  • 1/2 tsp turmeric powder
  • Salt/ pepper to taste
  • 2 tbsp olive oil
  • 3 liters water
  • Coriander (optional)
  • Lemon (optional)


Step 1 
Chop all the veggies.

Step 2
In a pot, brown the chicken on all sides for a few minutes until achieving a golden color. Set the chicken aside.

Step 3

  • Cook the onions, leek and garlic in the olive oil until translucent, for about 4-5 minutes. Season with some salt.
  • Add all the spices and cook for another 2-3 minutes.
  • Add the thyme sprigs, the celery and carrots and cook for another 2-3 minutes.


Step 4
Place the chicken back in the pot, pour the hot water, bring the water to a boil, cover and simmer on medium low for about an hour.

Step 5
After an hour, add the zucchini to the pot, cover and cook for another 15 minutes.

Step 6

  • Remove chicken from pot, shred it and place back in pot.
  • If you fancy, you can add chopped coriander leaves to the pot.
  • For extra flavor, squeeze some fresh lemon or lime juice.
